The Challenge
The challenge – The restaurant was part of a restaurant group in the middle of filing bankruptcy (4/5 restaurants had already closed their doors). This particular restaurant was running without any legitimate operational or leadership experience and was on the brink of shutting down as well.
I began with a week-long evaluation, followed by a strategic plan with the investor focusing on the following: culture development, hiring and training a new leadership team, building an accurate profit and loss statement, developing standard operating procedures, hiring, training and re-training of all team members. In addition, we built out a monthly events program and created an elevated Social Media presence.
The results were immediate and consistent..
- Implemented a new GM and Executive Chef
- Executive Chef nominated for Eater’s Young Guns 2020
- Built a culture vision that united the leaders and team members, and solidified values and goals for the business.
- 6 consecutive week over week sales increases of at least 10%
- Built a culture program that improved team building and reduced turnover by 50% upon implementation
- 4 consecutive month over month sales increases
- Increase rating on Google Reviews to 4.7/5
